Abstract
Actualmente, agricultores y la industria de hojuelas fritas de colores cuentan con 2
variedades INIAP-Yana Shungo e INIAP-Puca Shungo, la principal desventaja de
estas variedades es el bajo contenido de materia seca ((<20%), y alta absorción de
aceite en las hojuelas fritas (> 31 %).El INIAP ha seleccionado a nivel de Estación Experimental Santa Catalina 5
genotipos con pulpa de colores, sin embargo es necesario evaluar estos genotipos en
ambientes contrastantes, por lo que se planteo como objetivo “Evaluar el
comportamiento agronómico y de calidad agroindustrial de 8 genotipos de papa en 3
localidades de la sierra Ecuatoriana” .
Currently, farmers and the colored fried chips industry have 2 potato varieties: INIAP-Yana shungo and INIAP- Puca sluingo. The main disadvantages o f these varieties are the low dry matter content (<20%), and the high oil absorption in the fried chips (> 31 %). The National Agriculture Research Institute (INIAP) in the conditions o f Santa Catalina Experimental Station has selected 5 genotypes o f colored pulp potato. However, it is necessary to assess these genotypes in different environments, so that the objective o f this trial was "Assessing the agronomic and quality behavior o f 8 potato genotypes in 3 locations in the Ecuadorian highlands."
