Abstract
La zanahoria blanca es originaria de la Zona Andina, quizá la
única umbelífera domesticada en esta región. Es recomendada para
dietas 4p niños, ancianos y enfermos; pues, posee cantidades
adecuadas de calcio, hierro, fósforo, vitaminas y almidón de
fácil digestibilidad.
Esta especie está sufriendo un alto grado de erosión genética,
debido a que la demanda es cada vez menor y los agricultores
prefieren cultivar especies de mayor rentabilidad y aceptabilidad
en el mercado.
The white carrot or arracacha is primarily an Andean root crop and may be the only Umbellifera domesticated in this region. It is specially recommended for the diet of children, the elderly and the sick because it possesses adequate quantities of calcium, iron, phosphorus, vitamins and easy-digestible starch. This species is suffering a large scale of genetic erosion due to a decreasing demand and because farmers prefer to cultivate species that yield larger crops that are more acceptable in the markets.
