dc.description.abstractEste estudio fue diseñado para desarrollar y evaluar la tecnología de procesamiento de altramuz germinada, con el fin de aumentar el valor nutricional del grano y disminuir el contenido de factores no nutritivos. Para este estudio, se utilizó la variedad de altramuz INIAP-450. La tasa de absorción de agua se ensayó con tres tamaños de grano (7, 8, 9 mm de diámetro), la determinación de un comportamiento similar, con un aumento repentino de la humedad durante las tres primeras horas de remojo, que era lento en la siguiente 12 h y fue constante a partir de entonces. A la germinación de 90% y menor contenido de factores no nutritivos se alcanzaron en las siguientes condiciones: La humedad del grano (45%), temperatura (20 ° C), tiempo de germinación (4 días). altramuz germinada se desamarga después de 40 h en agua por medio de agitación. Con el uso de la germinación, los factores no nutritivos: rafinosa, estaquiosa y alcaloides, disminuyeron significativamente, mientras que los minerales: calcio (0,63%), magnesio (0,078%), cobre (112 ppm), hierro (121 ppm), manganeso (101 ppm) y zinc (184 ppm), se incrementaron. La germinación no sólo mejoró el contenido nutricional del grano, sino que también aumentó la disponibilidad de nutrientes, expresada en la digestibilidad y la solubilidad de la proteína, el perfil de ácidos grasos y aminoácidos de trigo germinado y desamargado. Los beneficios nutricionales y organolépticas obtenidos con la germinación de altramuz, hacen aconsejable aplicar este proceso en la industria alimentaria con el fin de ofrecer a los consumidores un nuevo producto, con propiedades funcionales y de alto valor nutricional.es_ES
dc.description.abstractThis study was designed to develop and evaluate the processing technology for germinated lupine, in order to increase the nutritional value of the grain and decrease the content of non-nutritive factors. For this study, INIAP-450 lupine variety was used. The water absorption rate was tested with three grain sizes (7, 8, 9 mm in diameter), determining a similar behavior, with a sudden increase in moisture during the first three hours of soaking, it was slow in the next 12 h and was constant from that time. A 90% germination and lower content of non-nutritive factors were reached under the following conditions: Grain moisture (45%), temperature (20°C), germination time (4 days). Germinated lupine was debittered after 40 h in water through stirring. With the use of germination, the non-nutritive factors: raffinose, stachyose and alkaloids, decreased significantly, while the minerals: calcium (0.63%), magnesium (0.078%), copper (112 ppm), iron (121 ppm), manganese (101 ppm) and zinc (184 ppm), were increased. Germination not only improved the nutritional content of the grain, it also increased the availability of nutrients, expressed in digestibility and protein solubility, the profile of fatty acids and amino acids of germinated and debittered grain. The nutritional and organoleptic benefits obtained with the germination of lupine, make it advisable to apply this process in the food industry in order to offer consumers a new product, with functional properties and high nutritional value.es_ES
