Abstract

Se analizan diez características físicas y químicas en tubérculos de papa. Son treinta y cuatro materiales: cinco variedades, definidas como progenitores; veinte y seis clones promisorios, obtenidos de los cruces entre los progenitores; y, tres estándares de calidad, aplicados con orientación a la agroindustria. Se normaliza la metodología para determinar fructosa, glucosa y sacarosa por cromatografía líquida de alta resolución en tubérculos de papa. El porcentaje de recuperación es de 85.23 (fructosa), 96.11 (glucosa) y 94.61 (sacarosa). El límite de detección para los tres azúcares es de 0.05mg/ml; y, el límite de cuantificación para fructosa y glucosa es 0.16mg/ml y para sacarosa es 0.17mg/ml.
Ten physical and chemical characteristics were analyzed in potato tubers. They are thirty four materials: five varieties that they were stated like progenitors; twenty six were promissory clones that they were obtained from cross between progenitors; and, three were used like quality standards applied for agro industry. Methodology was normalized in order to measuring fructose, glucose and sucrose content in potato tubers by high performance liquid chromatography. Recovery percentage was 85.23 (fructose), 96.11 (glucose) and 94.61 (sucrose). Limit of detection for these three sugars were 0.05mg/ml; and, limit of quantification for fructose and glucose were 0.16mg/ml and for sucrose was 0.17mg/ml.
