dc.description.abstractLa innovación científica de esta investigación se fundamenta en “la revalorización y aprovechamiento de las excelentes cualidades nutritivas y el potencial medicinal de los cuatro granos andinos por lo que el objetivo principal fue determinar la composición bromatológica y fitoquímica en las hojas y granos de cuatro variedades de quinua (INIAP pata de venado, IN1AP tunkahuan, criolla morada y criolla blanca), tres de chocho (INIAP 450, INIAP 451 y criolla), dos de amaranto (perucho y alegría) y sangorache. Se realizó el análisis bromatológico proximal y se determinó que en los parámetros de cenizas, proteína, grasa y fibra, la hoja de quinua, amaranto y sangorache tienen mayor porcentaje de contenido frente al grano. En el chocho solo el porcentaje de cenizas de la hoja es mayor al grano.es_ES
dc.description.abstractThe scientific innovation of this research is based on "the appreciation and use of the excellent nutritional and medicinal potential of the four Andean grains so that the main objective was to determine the chemical composition and phytochemical in leaves and grain of four varieties of quinoa (1N1AP leg of venison, 1N1AP Tunkahuan, purple and white Creole Creole), three o f lupine (1N1AP 4 5 0,1N1AP 451 and Creole), two of amaranth (perucho and joy) and sangorache. Compositional analysis was performed proximal and determined the parameters of ash, protein, fat and fiber, leaf quinoa, amaranth and sangorache highest percentage o f content against the grain. The lupine just the percentage of ash leaf is greater to the point.es_ES
